Chicken Noodle Soup 

 

Ingredients:

1/4 cup butter

1 small onion, diced

1 tsp minced garlic

1/2 oregano

1/2 tsp basil

1 - 32 oz. carton of chicken broth

1 large chicken breast cut in chunks

2  cups baby carrots

2-3 stalks celery, cleaned and diced

2 cups egg noodles

Salt and pepper to taste

 

Directions:

Sautee onion, spices, and garlic in butter until onion is soft. Add broth and bring to a boil. Add chicken and reduce heat. When chicken is cooked, bring to a boil and add carrots and celery. When veggies are tender, add egg noodles. Serve when the noodles are tender.  Serve with bread or crackers.

SW Chicken Chili

 

Ingredients:

1/4 cup butter

1 small onion, diced

1 cup diced red peppers

1 chicken breast, cut in strips, shredded or cut in chunks

1 can chili beans, with gravy

1 can black beans, drained

1 cup frozen corn

1 tsp minced garlic

1 tsp chili powder

2 cups chicken broth

1 large can diced tomatoes

1 small can Rotel tomatoes

Salt and pepper to taste

sour cream & chives (optional)

 

Directions:

Sautee onion, peppers, and garlic in butter until veggies are soft. Add broth and bring to a boil. Add tomatoes, beans, chicken, and corn. Simmer, uncovered for one hour. Top with sour cream and chives if desired. Best served with Famous Dave's Corn Bread.

 

 

Homemade Veggie Soup

 

Ingredients:

1/4 cup butter

1 small onion, diced

1/2 tsp minced garlic

2 tbsp corn starch

1 - 32 oz. carton of beef broth

2 large potatoes, peeled and cut into chunks

1 cup baby carrots

2-3 stalks celery, cleaned and diced

1 large can diced tomatoes

Salt and pepper to taste

 

Directions:

Sautee onion and garlic in butter until onion is soft. Add corn starch and mix well. Add broth slowly. Add diced tomatoes and bring to a boil. Add veggies and return to a boil. Reduce heat, cover, and simmer for 1 hour. Remove cover and continue to simmer for 1/2 hour. Serve with bread or crackers.

Broccoli Cheese Soup

 

Ingredients:

1/4 cup butter

1 small onion, diced

1/2 tsp minced garlic

2 heaping tbsp corn starch

2 cups chicken broth broth

8 oz Velveeta or other processed cheese, cut in chunks to melt faster

2 cups milk 2 cups cooked broccoli florets

 

Directions:

Sautee onion and garlic in butter until onion is soft. Add corn starch and stir. Add broth slowly and mix well. Add milk and lower heat. Add cheese and stir continuously until it is melted. Add broccoli and stir occasionally, continuing to simmer on low heat until broccoli is warmed through. Serve with bread or crackers.
